Coles Kale Coleslaw

We have never really been in to buying pre-made salad mixes as we prefer to make our own using only the freshest ingredients. But we make the exception when it comes to this kale coleslaw from Coles. It is fresh, delicious, raw, crunchy, earthy and we feel super healthy eating it.

Made in Australia with Australian sourced produce; ingredients include: kale, red cabbage, carrot, beetroot and broccoli. This salad kit comes in a 400 g package, generously serves 4 and is priced at $6.00.

Stores well in the fridge and keeps crisp and fresh unlike lettuce based salad mixes. Includes a yoghurt + chia dressing plus a packet of 3-seed mix. While the dressing is delicious it is not enough to greedily dress the whole salad.

We love to pack this for our work lunches and to also dress it with a lemony cashew cheese dressing (recipe below) and a generous handful of raw cashews.

Lemony Cashew Cheese Dressing (makes 1 1/4 cups)

INGREDIENTS

  • 1 cup raw cashews
  • 1 tbsp lemon zest
  • 1/3 cup lemon juice
  • 2 tbsp nutritional yeast
  • 1 clove garlic, chopped
  • 1/2 tsp ground black pepper
  • pinch of fine sea salt
  • 1/4 cup chopped chives

METHOD

  1. Soak cashews in boiling water and let sit for 30 minutes, drain and rinse.
  2. In a blender combine soaked cashews, 3/4 cup water, lemon juice, zest, yeast, garlic, pepper and salt. Blend until smooth and stir in chives.
